Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/2 cup unsweetened applesauce
- 1 cup almond milk
- 1 tsp apple cider vinegar
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 2 cups grated carrots
- 1/2 cup chopped walnuts (optional)
- For the frosting:
- 1/4 cup vegan butter, softened
Steps:
- Preheat the oven to 350°F (175°C) and grease a 9-inch cake pan.
- In a bowl, mix together flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together applesauce, almond milk, apple cider vinegar, sugar, vegetable oil, and vanilla extract.
- Combine the wet and dry ingredients, stirring until just mixed. Fold in grated carrots and walnuts.
- Pour the batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
- To make the frosting, beat together vegan butter, vegan cream cheese, powdered sugar, and vanilla extract until smooth.
