    This Vegan Chickpea Caesar Salad is a modern twist on the classic Caesar, tailored perfectly for those following a plant-based diet. With protein-packed chickpeas at the forefront, this salad not only boasts a delightful crunch but also a burst of flavors with a creamy and tangy vegan dressing. It’s a wholesome dish that marries nutritional richness with palate-pleasing tastes, making it an ideal choice for both casual meals and more sophisticated gatherings. The combination of crisp Romaine lettuce, roasted chickpeas, and a nutty, savory dressing creates a truly unforgettable culinary experience.

    Ingredients

    • 1 can chickpeas, drained and rinsed
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon smoked paprika
    • 1 large head of Romaine lettuce, chopped
    • 1/4 cup nutritional yeast
    • 1/4 cup vegan mayonnaise
    • 2 tablespoons lemon juice
    • 1 tablespoon Dijon mustard
    • 1 clove garlic, minced
    • Salt and pepper to taste

    Steps:

    1. Preheat oven to 400°F (200°C).
    2. Toss chickpeas with olive oil, garlic powder, smoked paprika, salt, and pepper.
    3. Spread chickpeas on a baking sheet and roast for 20 minutes or until crispy.
    4. In a large bowl, combine chopped Romaine lettuce and roasted chickpeas.
    5. In a separate bowl, whisk together nutritional yeast, vegan mayonnaise, lemon juice, Dijon mustard, and minced garlic to make the dressing.
    6. Serve immediately, garnished with additional nutritional yeast if desired.
