    Ingredients

    • 2 cups vegetable broth
    • 1 large onion, thinly sliced
    • 1/2 cup raisins
    • 3 tablespoons olive oil
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground ginger
    • Salt and pepper to taste
    • 1/4 cup slivered almonds, toasted
    • 2 tablespoons chopped fresh parsley

    Steps:

    1. 1. In a medium saucepan, bring the vegetable broth to a boil. Add couscous, stir once, and cover. Remove from heat and let it stand for 5 minutes. Fluff with a fork.
