Ingredients
- 2 cups of cornmeal
- 3/4 cup coconut sugar
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 1/2 cups coconut milk
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- Raisins or pieces of dates (optional)
Steps:
- In a large bowl, mix cornmeal, coconut sugar, cinnamon, and salt.
- Stir in coconut milk, melted coconut oil, and vanilla extract until well combined. If using, add raisins or dates.
- Divide the mixture among prepared banana leaves or aluminum foil squares, folding them to encase the mixture securely.
- Steam the cornmeal packages for about 40 minutes.
- Let them cool slightly before serving to allow the flavors to meld together admirably.
