Recipe Description

Delightfully spiced and perfectly sweet, these Vegan Gingerbread Cookies are a festive favorite, made with plant-based ingredients for a guilt-free holiday treat.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 cup vegan margarine
  • 1/2 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 flax egg (1 tbsp flaxseed meal with 3 tbsp water)

Steps:

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, prepare the flax egg by mixing the flaxseed meal and water. Set aside.
  3. In a large bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
  4. In another bowl, cream together vegan margarine and brown sugar until fluffy. Beat in molasses and the flax egg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Bake for 8-10 minutes or until the edges start to turn golden brown.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
