    Delight in this vegan twist on the classic Estonian treat, Kohuke. These bite-sized snacks feature a silky, creamy texture from blended cashews and are encased in a rich, dark chocolate shell. Sweetened naturally with dates and flavored subtly with vanilla, each Kohuke is a decadent, health-conscious treat perfect for satisfying your sweet tooth. This no-cook recipe offers a simple yet delicious dessert option that can be enjoyed year-round for various festive occasions.

    Ingredients

    • 1 cup raw cashews, soaked for 4 hours and drained
    • ½ cup pitted dates
    • ¼ cup coconut oil, melted
    • 1 teaspoon vanilla extract
    • Pinch of salt
    • 100 grams vegan dark chocolate
    • 1 tablespoon coconut oil

    Steps:

    1. Blend cashews, dates, ¼ cup coconut oil, vanilla, and salt in a food processor until smooth.
    2. Shape the mixture into small oval bars and place on a baking sheet lined with parchment paper.
    3. Freeze for at least 2 hours until firm.
    4. Melt the vegan dark chocolate with 1 tablespoon of coconut oil.
    5. Dip each chilled bar into the melted chocolate, ensuring it is completely coated.
    6. Enjoy chilled, and store any leftovers in the refrigerator.
