This savory and hearty stew combines the naturally earthy flavors of Lalo (Jute) leaves with an array of aromatic spices, creating a robust and satisfying meal. Perfect for anyone looking to explore Caribbean vegan cuisine, this meal is nutrient-dense, offering a good balance of proteins, fibers, and essential vitamins without compromising on taste.

    Ingredients

    • 2 tablespoons olive oil
    • 1 onion, diced
    • 4 cloves garlic, minced
    • 1 bell pepper, diced
    • 2 cups vegetable broth
    • 1 can coconut milk
    • 1 teaspoon salt
    • 1 teaspoon black pepper
    • 1/2 teaspoon thyme

    Steps:

    1. Heat the olive oil in a large pot over medium heat.
    2. Add the diced onions, garlic, and bell peppers, and sauté for about 5 minutes or until the onions become translucent.
    3. Stir in the chopped Lalo leaves and cook for about 10 minutes, until they begin to wilt.
