Ingredients

  • 1 medium breadfruit
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground cloves
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 can (400 ml) coconut milk
  • 1 bunch fresh thyme
  • Juice of 1 lime
  • 2 scallions, chopped

  1. Preheat the oven to 375°F (190°C).
  2. Peel the breadfruit, remove the core and cut into wedges.
  3. Heat olive oil in a large skillet over medium heat. Add onions, garlic, and bell pepper, sautéing until soft.
  4. Stir in allspice, cloves, paprika, salt, and pepper, cooking for another minute.
  5. Add the breadfruit wedges to the skillet, toss well to coat with the spices.
  6. Transfer the mixture to a baking dish, cover with aluminum foil, and bake for 35 minutes.
  7. Remove foil, bake for an additional 10 minutes or until the breadfruit is tender and slightly golden.
  8. Drizzle lime juice over the cooked breadfruit and garnish with scallions before serving.
