    This Vegan Lam Veritab Breadfruit dish is a delectable Caribbean feast, perfect for any season. The breadfruit serves as a succulent base, absorbing the rich, spiced flavors of the Caribbean seasonings beautifully, while maintaining a pleasing texture. It’s a wonderful vegan alternative that doesn’t compromise on taste or satisfaction. Ideal for family gatherings or a comforting meal, this recipe promises to be a crowd-pleaser.

    Ingredients

    • 2 tablespoons olive oil
    • 1 large onion, diced
    • 2 cloves garlic, minced
    • 1 bell pepper, diced
    • 1 teaspoon ground allspice
    • 1/2 teaspoon ground cloves
    • 1 teaspoon paprika
    • Salt and pepper to taste
    • 1 can (400 ml) coconut milk

    Steps:

    1. Preheat the oven to 375°F (190°C).
    2. Peel the breadfruit, remove the core and cut into wedges.
    3. Heat olive oil in a large skillet over medium heat. Add onions, garlic, and bell pepper, sautéing until soft.
    4. Stir in allspice, cloves, paprika, salt, and pepper, cooking for another minute.
    5. Add the breadfruit wedges to the skillet, toss well to coat with the spices.
    6. Transfer the mixture to a baking dish, cover with aluminum foil, and bake for 35 minutes.
    7. Remove foil, bake for an additional 10 minutes or until the breadfruit is tender and slightly golden.
    8. Drizzle lime juice over the cooked breadfruit and garnish with scallions before serving.
