Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon ground allspice
- 1/2 teaspoon ground cloves
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 can (400 ml) coconut milk
Steps:
- Preheat the oven to 375°F (190°C).
- Peel the breadfruit, remove the core and cut into wedges.
- Heat olive oil in a large skillet over medium heat. Add onions, garlic, and bell pepper, sautéing until soft.
- Stir in allspice, cloves, paprika, salt, and pepper, cooking for another minute.
- Add the breadfruit wedges to the skillet, toss well to coat with the spices.
- Transfer the mixture to a baking dish, cover with aluminum foil, and bake for 35 minutes.
- Remove foil, bake for an additional 10 minutes or until the breadfruit is tender and slightly golden.
- Drizzle lime juice over the cooked breadfruit and garnish with scallions before serving.
