Ingredients
- 1 cup granulated sugar
- 1/2 cup unsweetened applesauce
- 3/4 cup almond milk
- 1/4 cup vegetable oil
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1/4 tsp salt
- 2 cups unsweetened shredded coconut
- 1 cup powdered sugar
Steps:
- Preheat oven to 350°F (180°C) and line a baking pan with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- Add the applesauce, almond milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until just combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.
- For the icing, sift the powdered sugar and cocoa powder into a mixing bowl. Add water and vanilla extract, and stir until smooth.
- Place the shredded coconut in a shallow dish.
- Dip each cake square into the chocolate icing, ensuring all sides are covered, then roll in the shredded coconut.
- Place the lamingtons on a wire rack to set.
