This refreshing and zesty Vegan Larb Salad features finely chopped vegetables and tofu, seasoned with lime juice, chili flakes, and fresh herbs. A perfect light and healthy meal for any occasion.
Ingredients
- 2 tablespoons light soy sauce
- 1 tablespoon lime juice
- 1 teaspoon brown sugar
- 1/2 teaspoon red chili flakes
- 2 cups extra-firm tofu, crumbled
- 1/4 cup shallots, thinly sliced
- 1/3 cup mint leaves, chopped
- 1/3 cup cilantro, chopped
- 2 tablespoons green onions, chopped
- 1 tablespoon roasted rice powder
- 1 teaspoon lemongrass, minced (optional)
- Lettuce leaves for serving
- Cucumber slices and lime wedges for garnish
Steps:
- In a bowl, whisk together soy sauce, lime juice, brown sugar, and chili flakes.
- Heat a non-stick skillet over medium heat, add the crumbled tofu, and cook until slightly browned.
- Toss the tofu in the sauce mixture and cook for an additional 2 minutes.
- Remove from heat and allow to cool slightly.
- In a large bowl, combine tofu, shallots, mint, cilantro, green onions, roasted rice powder, and lemongrass if using.
