Recipe Description

Indulge in the festive spirit with these delightful vegan mince pies, featuring a crisp, buttery crust and a rich, spiced mincemeat filling.

Ingredients

  • 225g plain flour
  • 100g vegan butter, cold and cubed
  • 2-3 tbsp cold water
  • 400g vegan mincemeat
  • 1 tbsp plant milk, for brushing
  • Icing sugar, for dusting

Steps:

  1. Preheat your oven to 200C/390F.
  2. Place the flour and vegan butter in a large bowl. Rub the butter into the flour using your fingertips until the mixture resembles breadcrumbs.
  3. Gradually add cold water and mix until a dough forms. Wrap in cling film and chill for 15 minutes.
  4. Roll out the dough on a lightly floured surface and cut out circles using a pastry cutter. Press these circles into a muffin tray to form the pie bases.
  5. Spoon vegan mincemeat into each pastry case.
  6. Brush the tops with plant milk and bake for 18-20 minutes or until golden.
  7. Allow to cool slightly, then remove from the tin and dust with icing sugar before serving.
