Ingredients
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 inch ginger, minced
- 2 large tomatoes, pureed
- 3 cups sliced mushrooms
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp chili powder
- 1 tsp garam masala
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro for garnish
Steps:
- Heat the olive oil in a large pan over medium heat. Add the chopped onion, and sauté until they are golden brown.
- Add the minced garlic and ginger, and sauté for another 2 minutes until aromatic.
- Stir in the pureed tomatoes and cook for 5 minutes, or until the oil starts to separate from the mixture.
- Add the sliced mushrooms and cook for 10 minutes, or until they are soft and browned.
- Mix in the turmeric, cumin, coriander, chili powder, and salt. Cook for another 2 minutes.
- Finish by stirring in the garam masala and adjusting salt as per taste.
- Garnish with freshly chopped cilantro and serve hot.
