Recipe Description

A hearty and delicious Vegan Nut Roast packed with nuts, lentils, and vegetables. Perfect for a cozy autumn dinner or as a festive holiday main course.

Ingredients

  • 200g mixed nuts
  • 100g red lentils
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 stick celery, finely chopped
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp soy sauce
  • 100g breadcrumbs
  • 200ml vegetable stock
  • Salt and pepper to taste

Steps:

  1. Preheat the oven to 180°C (350°F, gas mark 4).
  2. In a large pan, cook the lentils in vegetable stock for 15 minutes, then drain.
  3. In a separate pan, sauté onion, garlic, carrot, and celery until soft.
  4. In a large bowl, combine the cooked lentils, sautéed vegetables, mixed nuts, breadcrumbs, tomato paste, soy sauce, thyme, rosemary, salt, and pepper.
  5. Press the mixture into a greased loaf tin.
  6. Let it cool slightly before turning out of the tin. Serve warm.
