Recipe Description
A warming bowl of Pho Chay, brimming with spices and loaded with colorful vegetables, perfect for a cold day.
Ingredients
- 8 cups vegetable broth
- 1 onion, sliced
- 4 cloves of garlic, minced
- 1 tablespoon ginger, grated
- 2 cinnamon sticks
- 3 star anise
- 2 cardamom pods
- 1 tablespoon soy sauce
- 200 g rice noodles
- 1 cup mushrooms, sliced
- 1 cup bok choy, chopped
- 1 carrot, sliced
- Fresh cilantro, basil, lime wedges, and sliced chili for garnish
Steps:
- In a large pot, bring the vegetable broth to a boil. Add onion, garlic, ginger, cinnamon, star anise, and cardamom pods. Simmer for 30 minutes.
- Strain the broth and return to the pot. Add soy sauce and adjust the seasoning.
- Cook rice noodles according to the package instructions.
- In the broth, add mushrooms, bok choy, and carrot. Cook until the vegetables are tender.
- Divide noodles among bowls. Pour hot broth and vegetables over the noodles.
