Recipe Description

A warming bowl of Pho Chay, brimming with spices and loaded with colorful vegetables, perfect for a cold day.

Ingredients

  • 8 cups vegetable broth
  • 1 onion, sliced
  • 4 cloves of garlic, minced
  • 1 tablespoon ginger, grated
  • 2 cinnamon sticks
  • 3 star anise
  • 2 cardamom pods
  • 1 tablespoon soy sauce
  • 200 g rice noodles
  • 1 cup mushrooms, sliced
  • 1 cup bok choy, chopped
  • 1 carrot, sliced
  • Fresh cilantro, basil, lime wedges, and sliced chili for garnish

Steps:

  1. In a large pot, bring the vegetable broth to a boil. Add onion, garlic, ginger, cinnamon, star anise, and cardamom pods. Simmer for 30 minutes.
  2. Strain the broth and return to the pot. Add soy sauce and adjust the seasoning.
  3. Cook rice noodles according to the package instructions.
  4. In the broth, add mushrooms, bok choy, and carrot. Cook until the vegetables are tender.
  5. Divide noodles among bowls. Pour hot broth and vegetables over the noodles.
