Recipe Description
A refreshing and colorful bowl of marinated tofu cubes, fresh vegetables, and rice, topped with a tangy and sweet sauce.
Ingredients
- 1 block firm tofu, cubed
- 1/4 cup soy sauce
- 1 tbsp sesame oil
- 1 tbsp maple syrup
- 1 tsp rice vinegar
- 1 cup cooked brown rice
- 1 diced avocado
- 1/2 cup sliced cucumber
- 1/2 cup shredded carrots
- 1/4 cup sliced green onions
- 2 tbsp sesame seeds
- 1/2 cup edamame
Steps:
- Press tofu to remove excess moisture, then cut into cubes.
- In a bowl, whisk together soy sauce, sesame oil, maple syrup, and rice vinegar. Add tofu cubes and marinate for at least 30 minutes.
- Prepare bowls with a base of brown rice. Top with marinated tofu, avocado, cucumber, carrots, green onions, edamame, and sesame seeds.
- Drizzle with any remaining marinade as dressing before serving.
