Recipe Description

A refreshing and colorful bowl of marinated tofu cubes, fresh vegetables, and rice, topped with a tangy and sweet sauce.

Ingredients

  • 1 block firm tofu, cubed
  • 1/4 cup soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp maple syrup
  • 1 tsp rice vinegar
  • 1 cup cooked brown rice
  • 1 diced avocado
  • 1/2 cup sliced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup sliced green onions
  • 2 tbsp sesame seeds
  • 1/2 cup edamame

Steps:

  1. Press tofu to remove excess moisture, then cut into cubes.
  2. In a bowl, whisk together soy sauce, sesame oil, maple syrup, and rice vinegar. Add tofu cubes and marinate for at least 30 minutes.
  3. Prepare bowls with a base of brown rice. Top with marinated tofu, avocado, cucumber, carrots, green onions, edamame, and sesame seeds.
  4. Drizzle with any remaining marinade as dressing before serving.
