Delightfully light and filled with fresh veggies, these vegan rice noodle rolls are perfect for a quick and healthy meal. Packed with flavors and dipped in a savory sauce, they’re sure to become a favorite!
Ingredients
- 200g rice noodles
- 2 carrots, julienned
- 1 cucumber, julienned
- 50g cabbage, thinly sliced
- Fresh basil leaves
- Fresh mint leaves
- Rice paper wrappers
- For the sauce: 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 teaspoon maple syrup, 1 clove garlic, minced
Steps:
- Cook rice noodles according to package instructions then rinse under cold water and set aside.
- Prepare the vegetables and set aside.
- Mix all the ingredients for the sauce in a small bowl.
- Soak a rice paper wrapper in warm water for about 20 seconds until it’s soft.
- Lay out the wrapper and place a small amount of noodles, carrots, cucumber, cabbage, basil, and mint in the center.
- Repeat with the remaining ingredients.
- Serve with the dipping sauce.
