Recipe Description

Delightfully light and filled with fresh veggies, these vegan rice noodle rolls are perfect for a quick and healthy meal. Packed with flavors and dipped in a savory sauce, they’re sure to become a favorite!

Ingredients

  • 200g rice noodles
  • 2 carrots, julienned
  • 1 cucumber, julienned
  • 50g cabbage, thinly sliced
  • Fresh basil leaves
  • Fresh mint leaves
  • Rice paper wrappers
  • For the sauce: 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 teaspoon maple syrup, 1 clove garlic, minced

Steps:

  1. Cook rice noodles according to package instructions then rinse under cold water and set aside.
  2. Prepare the vegetables and set aside.
  3. Mix all the ingredients for the sauce in a small bowl.
  4. Soak a rice paper wrapper in warm water for about 20 seconds until it’s soft.
  5. Lay out the wrapper and place a small amount of noodles, carrots, cucumber, cabbage, basil, and mint in the center.
  6. Repeat with the remaining ingredients.
  7. Serve with the dipping sauce.
