  • 4 medium potatoes, boiled and cubed
  • 2 carrots, boiled and sliced
  • 150g green peas, boiled
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 3 tablespoons vegan mayonnaise
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Steps:

  1. In a large bowl, mix the boiled potatoes, carrots, and green peas.
  2. Add the diced red and yellow bell peppers to the bowl.
  3. In a small bowl, whisk together the vegan mayonnaise and mustard. Season with salt and pepper.
  4. Pour the dressing over the vegetable mixture and toss to coat evenly.
