Ingredients

  • 10 Scotch Bonnet peppers, seeds removed
  • 1 carrot, chopped
  • 1 small onion, chopped
  • 2 cloves garlic
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 1 teaspoon sea salt
  • 1 tablespoon sugar
  • 2 tablespoons lime juice

Steps:

  1. Wear gloves and carefully deseed the Scotch Bonnet peppers.
  2. In a blender, combine the peppers, carrot, onion, garlic, white vinegar, water, sea salt, sugar, and lime juice. Blend until smooth.
  3. Pour the mixture into a saucepan and bring to a boil.
  4. Reduce the heat and simmer for about 20 minutes, stirring occasionally.
  5. Allow the sauce to cool, then bottle it in sterilized jars.
