- 4 cups granulated sugar
- 1 cup soy milk
- 3/4 cup coconut oil
- 1 teaspoon vanilla extract
Steps:
- Grease a square baking tin and line with parchment paper.
- In a large saucepan, combine sugar and soy milk, and bring to a boil, stirring constantly.
- Reduce heat to medium-low and simmer for 20 minutes without stirring.
- Remove from heat, add coconut oil and vanilla, and beat until thick and creamy.
- Pour into prepared tin and chill until set, about 2 hours.
