  • 4 cups granulated sugar
  • 1 cup soy milk
  • 3/4 cup coconut oil
  • 1 teaspoon vanilla extract

Steps:

  1. Grease a square baking tin and line with parchment paper.
  2. In a large saucepan, combine sugar and soy milk, and bring to a boil, stirring constantly.
  3. Reduce heat to medium-low and simmer for 20 minutes without stirring.
  4. Remove from heat, add coconut oil and vanilla, and beat until thick and creamy.
  5. Pour into prepared tin and chill until set, about 2 hours.
