- 1 cup semolina
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- Fresh berries or fruit compote, for serving
Steps:
- In a medium saucepan, bring the almond milk to a boil.
- Slowly whisk in the semolina and sugar, reducing the heat to low.
- Continue to whisk until the mixture thickens, about 5-10 minutes.
- Remove from heat and stir in the vanilla extract.
- Pour the pudding into bowls and allow to cool slightly. It will continue to thicken as it cools.
