    Recipe Description

    Delicious and aromatic, these vegan steamed lotus leaf wraps are filled with fragrant sticky rice, mushrooms, and assorted vegetables, making them a perfect dish for any festive occasion.

    Ingredients

    • 2 cups of glutinous rice, soaked overnight and drained
    • 1 tablespoon of vegetable oil
    • 2 cloves of garlic, minced
    • 1 cup of shiitake mushrooms, diced
    • 1 cup of carrot, julienned
    • 1 cup of bell pepper, julienned
    • 1/4 cup of soy sauce
    • 1 tablespoon of sesame oil
    • 1 teaspoon of sugar

    Steps:

    1. Soak the lotus leaves in warm water for 1 hour until softened, then drain and set aside.
    2. Heat vegetable oil in a pan over medium heat. Add garlic and sauté until fragrant.
    3. Add the mushrooms, carrot, and bell pepper. Cook for 5-7 minutes until slightly soft.
    4. Mix in the glutinous rice, soy sauce, sesame oil, sugar, salt, and pepper. Cook for another 5 minutes.
    5. Divide the rice mixture among the lotus leaves, folding them to enclose the filling securely.
    6. Serve warm.
