Delicious and aromatic, these vegan steamed lotus leaf wraps are filled with fragrant sticky rice, mushrooms, and assorted vegetables, making them a perfect dish for any festive occasion.
Ingredients
- 4 dried lotus leaves
- 2 cups of glutinous rice, soaked overnight and drained
- 1 tablespoon of vegetable oil
- 2 cloves of garlic, minced
- 1 cup of shiitake mushrooms, diced
- 1 cup of carrot, julienned
- 1 cup of bell pepper, julienned
- 1/4 cup of soy sauce
- 1 tablespoon of sesame oil
- 1 teaspoon of sugar
- Salt and pepper to taste
Steps:
- Soak the lotus leaves in warm water for 1 hour until softened, then drain and set aside.
- Heat vegetable oil in a pan over medium heat. Add garlic and sauté until fragrant.
- Add the mushrooms, carrot, and bell pepper. Cook for 5-7 minutes until slightly soft.
- Mix in the glutinous rice, soy sauce, sesame oil, sugar, salt, and pepper. Cook for another 5 minutes.
- Divide the rice mixture among the lotus leaves, folding them to enclose the filling securely.
- Serve warm.
