    Ingredients

    • 2 large sweet potatoes
    • 1 1/2 cups all-purpose flour
    • 1 tsp salt
    • 1/2 tsp nutmeg
    • 2 tbsp olive oil
    • 10 sage leaves
    • Salt and pepper to taste

    Steps:

    1. Bake sweet potatoes at 400°F until tender, about 45 minutes. Let cool, peel, and mash.
    2. Combine mashed sweet potatoes, flour, salt, and nutmeg in a bowl. Knead until a dough forms.
    3. Divide dough into four pieces. Roll each piece into a rope about 1 inch thick, then cut into 1-inch pieces.
    4. Bring a large pot of salted water to a boil. Cook gnocchi until they float, about 2-3 minutes. Drain and set aside.
    5. In a skillet, heat olive oil over medium heat. Fry sage leaves until crispy, about 30 seconds.
    6. Serve hot, garnishing with additional fried sage leaves if desired.
