- 1 1/2 cups all-purpose flour

- 10 sage leaves
- Salt and pepper to taste

- Combine mashed sweet potatoes, flour, salt, and nutmeg in a bowl. Knead until a dough forms.
- Divide dough into four pieces. Roll each piece into a rope about 1 inch thick, then cut into 1-inch pieces.
- Bring a large pot of salted water to a boil. Cook gnocchi until they float, about 2-3 minutes. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Fry sage leaves until crispy, about 30 seconds.
- Serve hot, garnishing with additional fried sage leaves if desired.
