Ingredients
- 1 tablespoon cornstarch
- 1 1/2 cups ice-cold water
- 1 teaspoon salt
- 2 cups assorted vegetables (bell peppers, sweet potatoes, broccoli, zucchini), cut into pieces
- Vegetable oil for frying
- Soy sauce for dipping
Steps:
- In a bowl, whisk together flour, cornstarch, salt, and ice-cold water to make the batter.
- Heat oil in a deep fryer or large pan to 350°F (175°C).
- Dip vegetables into the batter to coat evenly, then gently lower into the hot oil.
- Fry in batches until the batter is golden and crispy, about 2-3 minutes.
- Remove with a slotted spoon and drain on paper towels.
