  • 2 cups assorted vegetables (bell peppers, sweet potatoes, broccoli, zucchini), cut into pieces
  • Vegetable oil for frying
  • Soy sauce for dipping

Steps:

  1. In a bowl, whisk together flour, cornstarch, salt, and ice-cold water to make the batter.
  2. Heat oil in a deep fryer or large pan to 350°F (175°C).
  3. Dip vegetables into the batter to coat evenly, then gently lower into the hot oil.
