Ingredients

  • 1 block extra-firm tofu, pressed and cubed
  • 1 cup vegan yogurt
  • 1 tablespoon garam masala
  • 2 teaspoons turmeric
  • 2 teaspoons cumin
  • 2 tablespoons lemon juice
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 can (14 oz) coconut milk
  • Salt to taste
  • Fresh cilantro, for garnish
  • Cooked rice, for serving
  • Serve

Steps:

  1. Marinate tofu cubes in vegan yogurt mixed with garam masala, turmeric, cumin, and lemon juice for at least 1 hour or overnight.
  2. In a large pan, sauté onion, garlic, and ginger until soft.
  3. Add the marinated tofu and cook for 5 minutes.
  4. Add crushed tomatoes and coconut milk, and simmer for 20 minutes.
  5. Season with salt, garnish with cilantro, and serve with rice.
