Ingredients
- 1 block extra-firm tofu, pressed and cubed
- 1 cup vegan yogurt
- 1 tablespoon garam masala
- 2 teaspoons turmeric
- 2 teaspoons cumin
- 2 tablespoons lemon juice
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1 can (14 oz) crushed tomatoes
- 1 can (14 oz) coconut milk
- Salt to taste
- Fresh cilantro, for garnish
- Cooked rice, for serving

Steps:
- Marinate tofu cubes in vegan yogurt mixed with garam masala, turmeric, cumin, and lemon juice for at least 1 hour or overnight.
- In a large pan, sauté onion, garlic, and ginger until soft.
- Add the marinated tofu and cook for 5 minutes.
- Add crushed tomatoes and coconut milk, and simmer for 20 minutes.
- Season with salt, garnish with cilantro, and serve with rice.
