Recipe Description

A vegan take on the classic Welsh dish, combining a rich and tangy cheese sauce made from cashews and nutritional yeast, served over toasted bread for a delicious and satisfying meal.

Ingredients

  • 1 cup cashews, soaked and drained
  • 1/4 cup nutritional yeast
  • 1 tbsp soy sauce
  • 1 tsp mustard
  • 1 tsp vinegar (apple cider or white)
  • 1/2 cup water
  • Salt and pepper to taste
  • 4 slices of your favorite bread, toasted

Steps:

  1. In a blender, combine the soaked and drained cashews, nutritional yeast, soy sauce, mustard, vinegar, water, salt, and pepper. Blend until smooth and creamy.
  2. Transfer the sauce to a small saucepan and cook over medium heat, stirring constantly, until thickened (about 5 minutes).
  3. Toast the bread slices to your liking.
  4. Generously spread the warm sauce over the toasted bread slices.
  5. Serve immediately, optionally garnished with a sprinkle of paprika or chopped chives for extra flavor.
