    This vegan Wild Rice Pilaf is a nutritious blend of wild rice, crunchy almonds, sweet dried cranberries, and sautéed onions, all tossed with a splash of citrusy orange zest and fresh herbs. Perfectly balanced in flavors, it is a hearty dish that provides a wholesome addition to any meal, especially during the cooler seasons. Its inviting aroma and vibrant colors make it a festive choice for holiday gatherings or any special occasion.

    Ingredients

    • 3 cups vegetable broth
    • 1/2 cup diced onions
    • 1 clove garlic, minced
    • 1/2 cup sliced almonds
    • 1/2 cup dried cranberries
    • 1 teaspoon orange zest
    • 2 tablespoons olive oil
    • 1/4 cup chopped parsley
    • Salt and pepper to taste

    Steps:

    1. In a medium saucepan, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
    2. Add wild rice and toast for a few minutes, stirring frequently.
    3. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer until the rice is tender and the liquid is absorbed, about 45 minutes.
    4. Stir in almonds, dried cranberries, and orange zest.
    5. Adjust seasoning with salt and pepper.
