Fresh and colorful vegan spring rolls, packed with crispy vegetables and sweet mango, all wrapped in a delicate rice paper. Accompanied by a zesty lime dipping sauce for a refreshing bite.
Ingredients
- 12 rice paper wrappers
- 1 cup lettuce, shredded
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 bell pepper, julienned
- 1 mango, thinly sliced
- 1/4 cup fresh cilantro
- 1/4 cup fresh mint
- For the dipping sauce:
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon maple syrup
- 1 clove garlic, minced
- 1 teaspoon grated ginger
Steps:
- Prepare vegetables and mango.
- Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 15-20 seconds until just pliable.
- Lay wrapper on a clean, wet cloth and place a handful of the veggies, mango, cilantro, and mint in the center.
- Fold in the sides of the wrapper and then roll tightly.
- Repeat with the remaining ingredients.
- Serve spring rolls immediately with the dipping sauce.
