Recipe Description

Fresh and colorful vegan spring rolls, packed with crispy vegetables and sweet mango, all wrapped in a delicate rice paper. Accompanied by a zesty lime dipping sauce for a refreshing bite.

Ingredients

  • 12 rice paper wrappers
  • 1 cup lettuce, shredded
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 bell pepper, julienned
  • 1 mango, thinly sliced
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh mint
  • For the dipping sauce:
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon maple syrup
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger

Steps:

  1. Prepare vegetables and mango.
  2. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 15-20 seconds until just pliable.
  3. Lay wrapper on a clean, wet cloth and place a handful of the veggies, mango, cilantro, and mint in the center.
  4. Fold in the sides of the wrapper and then roll tightly.
  5. Repeat with the remaining ingredients.
  6. Serve spring rolls immediately with the dipping sauce.
