    Recipe Description

Ezme is a delightful Turkish salad or dip, known for its vibrant flavors and versatility. This vegan version captures the essence of the traditional dish, focusing on the freshness of tomatoes, the depth of red onions, and the tang of pomegranate molasses, all brought together with a blend of aromatic herbs and spices. Perfect as a bold appetizer or a side, it complements various dishes, from grilled vegetables to warm, fluffy pita bread. Rich in nutrients and colors, this ezme recipe celebrates the harmony of raw vegetables with exquisite seasonings, offering a healthful option that doesn’t skimp on taste. The inclusion of walnuts adds a lovely crunch, providing an added layer of texture to this sumptuous, vegan delight. Whether you’re seeking to elevate your mezze platter or looking for a refreshing, spicy salad, this ezme is poised to impress.

    Ingredients

    • 1 red onion, finely chopped
    • 2 green chillies, finely chopped
    • 1 clove of garlic, minced
    • 2 tablespoons olive oil
    • 1 tablespoon pomegranate molasses
    • Juice of 1 lemon
    • 1/2 cup walnuts, chopped
    • 1/2 cup fresh parsley, finely chopped
    • 1 teaspoon paprika

    Steps:

    1. In a large bowl, combine the diced tomatoes, chopped red onion, green chillies, and minced garlic.
    2. Add the olive oil, pomegranate molasses, and lemon juice to the mixture. Stir well to combine.
    3. Mix in the chopped walnuts, fresh parsley, paprika, and sumac. Season with salt to taste.
    4. Let the ezme sit for at least 15 minutes before serving to allow the flavors to meld together. Serve chilled or at room temperature.
