Ingredients
- 1/3 cup melted coconut oil
- 1/2 cup coconut sugar
- 1 tablespoon flaxseed meal
- 3 tablespoons water
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 3/4 cups all-purpose flour
Steps:
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a small bowl, mix the flaxseed meal and water. Set aside for 5 minutes to thicken.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted coconut oil into the mashed bananas.
- Mix in the coconut sugar, flaxseed mixture, and vanilla extract.
- Sprinkle the baking soda, salt, and cinnamon over the mixture and blend well.
- Pour the batter into the prepared loaf pan. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the bread cool in the pan for a few minutes. Then, transfer the bread to a wire rack to cool completely before slicing.
