Ingredients
- 1 9-inch vegan pie crust
- 1 1/2 cups granulated sugar
- 1/2 cup vegan butter, melted
- 1/2 cup all-purpose flour
- 3/4 cup vegan buttermilk (mix 3/4 cup plant milk with 2 tsp lemon juice)
- 3 tbsp cornstarch mixed with 3 tbsp water
- 1 tsp vanilla extract
- 1/4 tsp ground nutmeg
Steps:

- In a large bowl, mix together the sugar, melted vegan butter, and flour until well combined.
- Stir in the vegan butilk, cornstarch mixture, vanilla extract, and nutmeg until smooth.
- Pour the filling into the prepared pie crust.
- Bake in the preheated oven for 45 minutes, or until the pie is set and the top is lightly golden.
