Whether you’re a longtime vegan or just exploring plant-based options, these sushi rolls promise a burst of flavor that satisfies your sushi cravings while adhering to a vegan diet.
Ingredients
- 3 cups water
- 1/4 cup rice vinegar
- 2 tbsp sugar
- 1 tsp salt
- 6 sheets nori
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 avocado, sliced
- 1/2 red bell pepper, julienned
Steps:
- Rinse the sushi rice under cold water until the water runs clear. Combine with water in a rice cooker and cook according to manufacturer’s instructions.
- Once cooked, transfer the rice to a large bowl and gently fold in rice vinegar, sugar, and salt. Allow to cool to room temperature.
- On a bamboo sushi mat, place one sheet of nori, shiny side down. With wet fingers, evenly spread a thin layer of rice over the nori, leaving a small margin at the top edge.
- Arrange a line of cucumber, carrot, avocado, bell pepper, and pickled radish on the rice towards the bottom.
- Start rolling the sushi tightly from the bottom edge using the bamboo mat. Seal the edge with a little water.
- Serve with soy sauce, wasabi, and pickled ginger.
