Zacuscă is a rich and smoky vegetable spread, featuring roasted eggplant and bell peppers, ideal for spreading on bread or as a savory dip.
Ingredients
- 3 large eggplants
- 6 bell peppers, mixed colors
- 1 large onion, finely chopped
- 2 carrots, grated
- 400g (14 oz) can of diced tomatoes
- 5 tablespoons of olive oil
- 2 bay leaves
- 1 teaspoon of salt
- 1/2 teaspoon of ground black pepper
- 1 teaspoon of smoked paprika
Steps:
- Roast the eggplants and bell peppers in the oven at 475°F (240°C) for 30-35 minutes, until their skin blisters and they are soft inside.
- Allow the vegetables to cool, then peel the skin away and finely chop them.
- In a large pot, heat the olive oil over medium heat. Add the onions and carrots, cooking them until they are soft.
- Add the chopped eggplants, bell peppers, canned tomatoes, bay leaves, salt, pepper, and smoked paprika to the pot.
- Stir well to combine all ingredients. Reduce the heat to low and let the mixture simmer for 45-60 minutes, stirring occasionally.
