Ingredients

  • 1 cup basmati rice, rinsed and drained

  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 2 cloves
  • 1 inch cinnamon stick
  • 2 cardamom pods
  • 1/2 cup chopped carrots
  • 1/2 cup peas
  • 1/2 cup chopped green beans
  • 1/2 cup chopped bell pepper
  • 2 tablespoons chopped coriander leaves
  • 1.5 cups water
  • Salt to taste

Steps:

  1. Heat oil in a large saucepan over medium heat.
  2. Add cumin seeds, bay leaf, cloves, cinnamon stick, and cardamom pods. Sauté for 2 minutes.
  3. Add the sliced onions and sauté until they turn golden brown.
  4. Add the chopped vegetables and stir for about 5 minutes.
  5. Stir in the basmati rice and sauté for another 2 minutes.
  6. Fluff the rice with a fork and garnish with chopped coriander leaves before serving.
