    Ingredients

    • 1 onion, chopped
    • 2 carrots, diced
    • 2 stalks celery, diced
    • 3 cloves garlic, minced
    • 1 teaspoon dried thyme
    • 1 cup wild rice
    • 4 cups vegetable broth
    • 1 can coconut milk
    • Salt and pepper to taste

    Steps:

    1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are tender.
    2. Add the garlic and thyme, cooking for another minute until fragrant.
    3. Stir in the wild rice, vegetable broth, and bring to a boil. Reduce heat to a simmer, cover, and cook for 35-45 minutes, or until the rice is tender.
    4. Stir in the coconut milk, and season with salt and pepper. Heat through.
    5. Serve hot, garnished with chopped parsley.
