Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 3 cups vegetable broth
- 1 can (15 oz) hominy, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
Steps:

- Add onion and garlic, and sauté until onions are translucent.

- Simmer for another 15 minutes or until the stew has thickened slightly.
