    Hearty Hominy Stew

    This lusciously thick and rich Hominy Stew captures the essence of hearty, plant-based comfort food. Packed with juicy tomatoes, robust hominy, and a medley of aromatic herbs and spices, this stew is perfect for a cozy winter’s evening. A beloved dish in the American Southwest, its satisfying depth of flavor is sure to warm you from the inside out. Complete the meal with a slice of crusty bread for a delightful dining experience.

    Ingredients

    • 1 large onion, chopped
    • 2 cloves garlic, minced
    • 1 bell pepper, diced
    • 3 cups vegetable broth
    • 1 can (15 oz) hominy, drained and rinsed
    • 1 can (15 oz) diced tomatoes
    • 1 teaspoon smoked paprika
    • 1 teaspoon ground cumin
    • 1/2 teaspoon chili powder

    Steps:

    1. Heat olive oil in a large pot over medium heat.
    2. Add onion and garlic, and sauté until onions are translucent.
    3. Add bell pepper and cook for another 5 minutes.
    4. Stir in vegetable broth, hominy, and diced tomatoes, bringing the mixture to a boil.
    5. Reduce heat and simmer for 30 minutes.
    6. Simmer for another 15 minutes or until the stew has thickened slightly.
    7. Garnish with fresh cilantro before serving.
