Recipe Description
A warming and satisfying traditional stew made entirely from plant-based ingredients. Perfect for those chilly nights!
Ingredients
- 3 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cups frozen lima beans
- 2 cups frozen corn kernels
- 3 large potatoes, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tablespoon apple cider vinegar
- 2 teaspoons smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup pulled jackfruit
- 2 tablespoons barbecue sauce
Steps:
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add lima beans, corn, potatoes, diced tomatoes, and vegetable broth. Bring to a boil.
- Reduce heat to simmer. Add apple cider vinegar, smoked papoda, dried thyme, salt, and pepper.
- Cover and simmer for 45 minutes, or until potatoes are tender.
- Serve hot and enjoy your vegan Brunswick Stew.
