Ingredients

  • 1 cup lentils
  • 2 cups vegetable broth
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 tablespoons ground flaxseed
  • 1/4 cup tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh herbs (thyme, rosemary, parsley)
  • Salt and pepper to taste
  • Tomato glaze: 1/4 cup ketchup, 1 tablespoon maple syrup, 1 tablespoon balsamic vinegar

Steps:

  1. Rinse lentils under cold water. In a saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce to a simmer. Cook until lentils are tender, about 20 minutes.
  2. Preheat oven to 375°F (190°C).
  3. In a large bowl, combine cooked lentils, onion, garlic, breadcrumbs, ground flaxseed, tomato paste, soy sauce, smoked paprika, olive oil, and herbs. Mix well. Season with salt and pepper.
  4. Transfer mix to a greased loaf pan, pressing down firmly.
  5. In a small bowl, mix ketchup, maple syrup, and balsamic vinegar. Spread this glaze over the top of the loaf.
  6. Allow to cool before slicing. Serve warm.
