Recipe Description
Delightful and crispy Irish potato cakes, perfect for a vegan breakfast or as a tasty side dish for any meal.
Ingredients
- 1/4 cup almond milk
- 2 tablespoons vegan butter
- 1 cup all-purpose flour (plus extra for dusting)
- 1/2 teaspoon baking powder
- Salt and pepper to taste
- Oil for frying
Steps:
- Boil the potatoes in salted water until tender. Drain and mash with vegan butter and almond milk until smooth.
- Let the potato mixture cool, then stir in the flour, baking powder, salt, and pepper. Mix until a dough forms.
- On a floured surface, roll out the dough to about 1/2 inch thickness and cut into rounds using a biscuit cutter.
- Heat oil in a frying pan over medium heat. Fry the potato cakes until golden brown on each side, about 4 minutes per side.
- Drain on paper towels before serving hot.
