Ingredients

  • 4 large potatoes, peeled and cubed
  • 1/4 cup almond milk
  • 2 tablespoons vegan butter
  • 1 cup all-purpose flour (plus extra for dusting)
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • Oil for frying

Steps:

  1. Boil the potatoes in salted water until tender. Drain and mash with vegan butter and almond milk until smooth.
  2. Let the potato mixture cool, then stir in the flour, baking powder, salt, and pepper. Mix until a dough forms.
  3. On a floured surface, roll out the dough to about 1/2 inch thickness and cut into rounds using a biscuit cutter.
  4. Heat oil in a frying pan over medium heat. Fry the potato cakes until golden brown on each side, about 4 minutes per side.
  5. Drain on paper towels before serving hot.
