Method
Tested in our kitchen
Heat oil in a pot over medium heat.
Add mustard seeds and cumin seeds and let them splutter.
Add chopped onions, green chili, and garlic. Sauté until onions are translucent.
Stir in turmeric and diced tomatoes. Cook until tomatoes are soft.
Add red lentils and water. Bring to a boil, then simmer for 20-25 minutes or until the lentils are soft and cooked through.
Garnish with chopped cilantro before serving.
