Vegan Pav Bhaji

Boil potatoes, carrots, cauliflower, and green peas until soft. Mash them together and set aside.
In a large pan, heat vegan butter. Add onions, bell pepper, garlic, and ginger. Sauté until onions are translucent.
Add tomatoes, tomato paste, pav bhaji masala, turmeric, red chili powder, and salt. Cook until oil separates.
Add mashed vegetables to the pan. Mix well and cook for 10 minutes. Add water if the mixture is too thick.
Stir in lemon juice and garnish with cilantro. Serve hot with buttered pav.
