Rinse the grape leaves in cold water and set aside.

In a bowl, mix cooked rice with olive oil, onions, dill, parsley, dried mint, and half the lemon juice. Season with salt and pepper.

Take a grape leaf, place it shiny side down, and add a small amount of the rice mixture at the base. Fold in the sides and roll tightly.

Place the stuffed leaves seam side down in a pot.

Once all are in the pot, pour over the remaining lemon juice and enough water to cover. Place a plate on top to hold them down.
