In a blender, combine soy sauce, vegetable oil, apple cider vinegar, lime juice, garlic, ginger, green onions, Scotch bonnet pepper if using, brown sugar, allspice, cinnamon, nutmeg, salt, and pepper. Blend until smooth.

Place the tofu slices in a bowl and pour the marinade over them, ensuring all pieces are well coated. Marinate in the refrigerator for at least 1 hour, or overnight for best results.

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Arrange the marinated tofu slices on the baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until the tofu is firm and the edges are crispy.
