Preheat the oven to 425°F (220°C).
In a large bowl, toss the potatoes with olive oil, lemon juice and zest, garlic, rosemary, thyme, salt, and pepper.
Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
Roast for 45 minutes, or until the potatoes are golden and crisp, turning them halfway through the cooking time.
Adjust seasoning if necessary and serve hot.
