An amazingly close-to-the-real-thing vegan “no-tuna” salad sandwich made from chickpeas, perfectly spiced and served with crisp lettuce on your favorite bread.

In a bowl, mash the chickpeas with a fork or potato masher until flaky in texture.

Add the vegan mayonnaise, dijon mustard, chopped red onion, chopped celery, nori or kelp granules (if using), and mix until well combined.

Season with salt and pepper to taste.

Assemble the sandwiches with two slices of bread, a generous helping of the “no-tuna” salad, and a lettuce leaf. Serve immediately.
