Rinse the jasmine rice until the water runs clear.
In a large pot, combine the coconut milk, water, shredded coconut, sugar, and salt. Bring to a boil.
Add the rinsed rice to the pot. Reduce heat to low, cover, and simmer for 40 minutes, or until rice is tender and liquid is absorbed.
Fluff the rice with a fork and serve warm.
