Method
Tested in our kitchen
Thinly slice the cucumber and daikon radish.
In a mixing bowl, sprinkle salt over the sliced vegetables and massage gently. Let them sit for about 10 minutes.
Squeeze the excess water out of the vegetables.
In a separate bowl, mix together rice vinegar, sugar, and soy sauce until well combined.
Add the squeezed vegetables and kombu to the mixture. Ensure that all pieces are submerged.
Refrigerate for at least 1 hour before serving to enhance the flavors.
Serve chilled as a refreshing side.
