Vegan Anzac Biscuits

Preheat oven to 180°C (350°F) and line two baking trays with baking paper.
In a large bowl, combine the oats, flour, sugar, and coconut.
Melt the vegan butter and golden syrup together in a small pot over low heat.
Dissolve the baking soda in boiling water and add to the butter and syrup mixture.
Pour the wet ingredients into the dry ingredients and mix well.
Bake for 10-15 minutes or until golden brown.
Allow to cool on the trays for 5 minutes, then transfer to a wire rack to cool completely.
