Method

Heat the olive oil in a large pan over medium heat. Add the chopped onion, and sauté until they are golden brown.
Add the minced garlic and ginger, and sauté for another 2 minutes until aromatic.
Stir in the pureed tomatoes and cook for 5 minutes, or until the oil starts to separate from the mixture.
Add the sliced mushrooms and cook for 10 minutes, or until they are soft and browned.
Mix in the turmeric, cumin, coriander, chili powder, and salt. Cook for another 2 minutes.
Finish by stirring in the garam masala and adjusting salt as per taste.
Garnish with freshly chopped cilantro and serve hot.
